Description
This Metodo Classico Extra Brut sparkling wine Riserva 60 mesi is produced by the Sandro de Bruno winery and originates on the volcanic hills of Monte Calvarina, in the province of Verona, from a blend of Durella and Pinot Bianco grapes. The vineyards, situated at altitudes between 450 and 600 meters on soils rich in basaltic rocks, benefit from southern exposure and an ideal microclimate for a slow and aroma-rich ripening. The choice of variety and the production area give the wine a distinctive mineral profile and elegant structure.
Vinification begins with manual harvesting at the end of September and cold skin maceration for 12-18 hours, followed by gentle pressing in a protected atmosphere. The must ferments in steel and remains on the fine lees for 8-12 months with weekly bâtonnage. The secondary fermentation occurs in the bottle, where the wine ages on its own yeasts for at least 60 months. After disgorgement, a final rest follows for 5-6 months before being put on the market, with artisan care for every detail.
It presents in the glass with a bright golden yellow color and a fine and elegant perlage. The aroma is intense and layered: it opens with mineral notes of flint, followed by tropical fruit such as pineapple, mango, and papaya, and ripe sweet citrus. Scents of peach, bread crust, almonds, white flowers, and herbs like thyme and sage also emerge. On the palate, it is creamy, rich, and persistent, with a savory and slightly bitter finish that enhances its pleasantness.
Ideal with refined appetizers, pasta dishes with fresh pasta, or fish and white meat main courses, thanks to its elegance and versatility throughout the meal.
