Description
Viogner, a white grape variety of French origin, also finds expression on Lazio soil. The winery that makes it, Casale del Giglio, is located precisely in La Ferriera, in the province of Latina.
It consists of pure Viogner grapes, grown from loose and not very fertile soils, an ideal condition for the optimal maturation of this variety. The harvest takes place in September in two distinct moments: the first at the beginning of ripening, in order to preserve the fresh crunchiness of the fruit, while the second with a slight over-ripening of the grapes, so as to bring structure and aromatic intensity. There follows a cryomaceration with the skins and a vinification in steel, in which the maturation phase is foreseen in contact with the fermentation yeasts.
It has an intense and bright yellow color, straw-colored but tending towards golden. The scent is markedly fruity and floral, with flavors of peach, apricot, broom and acacia flowers. In the mouth it fully confirms the olfactory profile and animates it with a thick and soft body.
