Description
Tempranillo is a grape variety with Portuguese origins, which manages to express itself best in the ventilated climate areas with fresh and deep soils. These requirements are met by the area of Lazio called Valle, where the Casale del Giglio vineyards are located.
The Tempranillo grapes, 100% present, are harvested in slight over-ripening or, sometimes, following a slight drying on the plant. After a cold maceration, alcoholic fermentation spontaneously starts. 15-20% of the wine ages in cherry tonneaux while the remaining part ages in steel tanks before bottling.
The color is intense ruby. The nose is markedly fruity: reminiscent of raspberry, cherry, morello cherry and black currant. The taste also reveals a particular spicy texture, supported by an elegant acid contribution and a solid structure.
To be combined with a stewed octopus, or with a fish stew enriched with olives and aromatic herbs.
