Description
The Rossese Bianco by Josetta Saffirio expresses in purity a grape originating from the Cinque Terre and rediscovered in the old vineyards of Monforte d'Alba in the mid-70s. We are located in the Castelletto sub-area, on a medium-textured soil well balanced between the components of silt, clay and sand, rich in mineral salts.
The grapes are harvested late in the last decade of September, once the noble rot Botrytis Cinerea has covered the bunches. Fermentation is carried out partly in steel at a controlled temperature and partly in oak barrels, after which the wine rests on the fine lees, where malolactic fermentation takes place, until bottling.
Straw yellow color. It has a broad scent of citrus and herbaceous notes. On the palate it is confirmed as a lively and savory wine, with great character.
Splendid in combination with shellfish and fish main courses, it does not disdain medium-aged cheeses.
