Description
This Langhe Dolcetto by Renato Ratti takes its name from the vineyard from which it is produced, Colombè, located in the Cuneo municipality of Mango.
The harvest takes place manually between the middle and the end of September. The must ferments at a controlled temperature of 28 ° C in steel, with 5 days maceration. Once the malolactic fermentation is complete, the wine ages in steel for a few months.
In the glass it is a beautiful ruby red with purple hues. The nose is intense and fragrant, with hints of cherry and ripe plum. On the palate it admirably combines its tannin in perfect balance with a vinous and fragrant sip with a pleasantly bitter finish.
To combine with appetizers and first courses, but also with fresh cheeses.
