Description
The ancestral refermentation Lambrusco di Modena of Gavioli is located in the vineyard owned in via di Rebecchi 72, in Nonantola di Modena.
It is obtained exclusively from Lambrusco di Sorbara grapes, with manual harvesting of the best bunches between the end of September and the first days of October. After a soft pressing, the must ferments under controlled temperature conditions. The second fermentation takes place by natural refermentation inside each bottle, according to Ancestral Method, already used in Roman times.
Ruby-red Lambrusco with garnet reflections, with a pink finesse of beautiful finesse, it releases a fruity and floral bouquet that is enriched with notes of bread and brioche. The taste is full and dry, with a balanced acidity that invites you to drink.
Recommended in combination with the first courses of the Emilian cuisine such as tortellini and passatelli in broth, it goes perfectly with boiled and roasted. By virtue of its elegance it can also be thought of in combination with fish dishes.
