Description
This Lambrusco di Sorbara di Gavioli comes to life from owned vineyards located in the municipalities of Bastiglia, Nonantola and Bomporto, in the province of Modena.
It is mainly produced with Lambrusco di Sorbara grapes and Lambrusco Salamino grapes, harvested manually between the end of September and the beginning of October. Vinification is carried out in red at controlled temperature, with a very brief maceration in contact with the skins. The sparkling process takes place very slowly in a pressurized tank, according to the Charmat method.
With a bright ruby red colour with pink reflections and a fine and lively foam, it opens with a delicate and enveloping perfume with typical hints of violet. The taste is dry and savoury, characterized by a splendid freshness.
Perfect to serve with the first courses of the Emilian cuisine, such as tortellini and passatelli in broth, it proves ideal with roasts and stewed meats. Its marked elegance makes it also combinable with fish.
