Lambrusco di Sorbara Extra Brut DOC Infondo 2021 Silvia Zucchi

The Infondo wine is a Lambrusco di Sorbara from the Silvia Zucchi company, an Extra Brut sparkling wine made with 100% Lambrusco grapes from San Lorenzo (MO) near the Secchia River.

The first fermentation takes place in steel vats at a controlled temperature for about 2 months, where it then remains for an ageing of 4 months before bottling and subsequent second fermentation in bottle, which leaves a sediment and hence the name of the wine.

The result is a coral pink wine, with a fine and delicate perlage. On the nose, there are mineral hints and references to notes of red fruits and white flowers. On the palate, rose hips, strawberries and raspberry stand out, with acidic hints of grapefruit, for a good structure and a medium-long lasting mineral sip overall.

Ideal for aperitifs and appetizers based on not too seasoned cold cuts and fried pasta.
