Description

The Lambrusco di Sorbara 1928 Semisecco from Cantine Cavicchioli is a sparkling wine obtained from Lambrusco di Sorbara grapes grown in the area north of Modena, between the Secchia and Panaro rivers. The winery, with a history that begins in 1928, passes down its winemaking experience and passion from generation to generation, following a protocol that respects tradition and the quality of the grapes.

The grapes are vinified in red with low temperature cryomaceration for 2-3 days. Alcoholic fermentation lasts approximately 10-15 days on the skins in the must, at a controlled temperature of 15-18°C with selected yeasts. This is followed by refermentation according to the Charmat method for 4 weeks at 13-15°C, guaranteeing a quality final product.

Lambrusco di Sorbara 1928 Semisecco has a pale ruby red color and a foam with purple reflections. On the nose, it offers a vinous, intense and fruity bouquet, with a characteristic violet scent. On the palate, it is harmonious and lively, with a pleasant sweet note.

This wine pairs perfectly with dishes of cured meats, cheeses and traditional Modena first courses.
