Description

Lambrusco di Sorbara Radice is a dry sparkling wine, produced by Cantina Paltrinieri in the most suitable area of Sorbara, between the Secchia and Panaro rivers, in the province of Modena, in Emilia-Romagna. Made with 100% Lambrusco di Sorbara grapes from the 15-hectare "Cristo" vineyard, it grows on loose and predominantly loamy soils, fresh and rich in organic substances.

The harvest takes place in mid-September and provides a yield of 120 quintals per hectare. The vinification is carried out without maceration, with soft pressing of the must and alcoholic fermentation. The refermentation occurs naturally in the bottle on native yeasts, followed by refinement in the bottle, followed by bottling which takes place at the beginning of March.

Salmon pink in color with a very fine and persistent perlage, it is slightly cloudy due to the residue of refermentation. On the nose it offers citrus notes of grapefruit, wild strawberries and a delicate hint of wild rose. On the palate it is fresh, with a lively acidity that recalls pomegranate and green apple peel, completed by a great flavor, balance and persistence.

Ideal as an aperitif, it pairs well with fried fish, raw fish, tuna, salmon, tortellini in broth, cured meats, fried dumplings and crescentine.
