Description
The Ladoix 1er Cru La Corvée from the Parent domain is an excellent expression of Pinot Noir coming from the clay-limestone soils of Ladoix, an area notoriously favorable for viticulture thanks to its peculiar pedo-climatic characteristics.
The manual harvest with careful selection of the bunches guarantees the high quality of the raw material, which is then subjected to a pre-fermentation maceration at low temperature for 3-5 days. Fermentation takes place at a controlled temperature for 16-18 days, followed by aging in partially new oak barrels for 14 months.
It presents itself to the eye with a ruby red color and a broad and intense nose that offers notes of cherry and red currant. On the palate it is balanced, full and round, with ripe and velvety tannins.
It is excellent in combination with all red meat-based second courses and game, both feathered and feathered.
