Description
La Folie is Maison Mirabeau's sparkling rosé wine made with Grenache, Syrah and Colombard grapes.
The grapes grow on calcareous and clayey soils at about 200 meters above sea level. After harvesting, the grapes are fermented with the Charmat Method at low temperatures and before refining in contact with the yeasts to obtain greater fragrance and complexity.
Pale pink in color with appreciable violet reflections, it has a fine and persistent perlage. Extremely balanced nose with notes of apricot, yellow peach, white melon and passion fruit, supported by hints of lavender honey. Crunchy on the palate, with excellent acidity and refreshing capacity, it maintains the depth of fruit and a high aromatic tension before a medium-long finish.
Perfect for aperitifs, it is also a wine for elegant occasions and ideal to accompany semi-mature cheeses or fresh cheeses served with jams and dried fruit.
