Description
The Pala winery is a beautiful family business, today led by Mario Pala, who represents the third generation. It all started in 1950 with some vineyards planted near Serdiana. Today the estate includes eight different properties, intended for the cultivation of the main Sardinian indigenous grape varieties, both white and red.
Vermentino Stellato is one of the best excellences of the winery. The grapes come from 60-year-old vines grown on the Is Crabilis estate in Ussana, at an altitude of about 180 meters above sea level. The soils are stony, of a calcareous-sandy nature, not very deep, and insist on a limestone mother rock. At the end of the soft pressing of the bunches, the must is fermented with selected yeasts in steel vats at a controlled temperature. The wine ages on the fine lees in steel tanks for a few months before being bottled.
Characterized by a bright straw yellow color, it offers intense aromas of hawthorn and orange blossom, medicinal herbs, aromas of green apple, peach and cartridge melon. The sip is savory and balanced, with fragrant aromas and a fresh and harmonious finish.
To combine with seafood first courses, sea bass in salt.
