Description
The Cagnulari of the Cherchi company takes its name from the ancient Cagnulari variety rediscovered by Giovanni Cherchi.
With hilly terrain located at 200 meters above sea level, the harvest is carried out in the second and third decade of September. Once in the cellar, the grapes are destemmed and crushed before starting the fermentation with the skins for 8-10 days at 25/28 ° C. The malolactic fermentation is carried out spontaneously in autumn or in the spring following the harvest. The wine is mainly aged in stainless steel tanks and, for a small part, in wooden barrels for about 6 months.
Of a beautiful intense ruby red, it has a good intensity on the nose with hints of jam and green notes of geranium. On the palate it is dry and slightly savoury, with good structure and well integrated tannins. Of medium gustatory persistence, it has good ageing potential.
Perfect wine for cold cuts appetizers, first courses with savoury sauces and legume soups. It also goes well with grilled white and red meats and medium-aged cheeses.
