Description
Bozal Ensamble is a fine Mexican mezcal made with a mix of Espadin, Barril and Mexicano agaves. The Barril and Mexicano agave are harvested in the wild, while the Espadin agave is cultivated. This Mezcal is produced by three different mezcaleros, Fermin Garcia, Lucio Bautista and Don Adrian Bautista, in two cities in the state of Oaxaca: San Dionisio Ocotepec and Ejutla de Crespo. The result is an ensemble that captures the wild and authentic essence of the region.
The production of the Bozal Ensamble follows traditional artisan methods. The agaves are cooked in underground ovens, then ground with animal traction, usually horses or bulls. The fermentation is spontaneous, without the addition of yeasts, and the distillation is discontinuous. This careful process guarantees that each bottle reflects the uniqueness of Mezcal, keeping intact the unique characteristics of the agaves used.
Bozal Ensamble offers a complex and fascinating aromatic profile. On the nose, delicate smoky notes with herbaceous tones emerge. On the palate, the citrus and floral notes of the Barril blend harmoniously with the viscous heat of the Mexicano, creating a perfect balance that develops in the center of the palate and culminates in a soft and enveloping finish.
This Mezcal is ideal to be enjoyed pure, to fully appreciate its nuances, or it can be used to create sophisticated cocktails, adding an authentic and wild touch to every preparation.
