Description
The Bourgogne Hautes-Côtes de Nuits by Reine Pédauque is a red wine exclusively produced with Pinot Noir grapes, grown in the heights above the Côte de Nuits. These vineyards benefit from an elevated position, between 300 and 400 meters above sea level, offering an ideal climate for the ripening of the grapes.
Traditional winemaking takes place in thermoregulated stainless steel tanks, with a cold pre-fermentative maceration and subsequent fermentation at controlled temperatures. The wine matures between 8 and 12 months partly in oak barrels, 20% of which are new, allowing malolactic fermentation to take place.
It is characterized by a ruby red color and aromas of fresh red fruits, such as raspberry and cherry, enriched with notes of liquorice and toasted coffee. On the palate, the tannins are soft and well structured, with a freshness and finesse that support the aromatic intensity and offer a persistent finish.
Ideal with white meats, such as rabbit, lamb, duck and grilled dishes, it surprises in combination with sweet and sweet and sour or slightly spicy dishes.
