Description
De la Finca sparkling wine from Raventós i Blanc is a natural wine produced from Xarel lo, Macabeu and Parellada grapes, from vineyards grown using organic and biodynamic agriculture in the Conca del Riu Anoia region, in Sant Sadurní d'Anoia, Catalonia. The vineyards, located on soils of marine origin, rich in clay and fossils, best express the character of the terroir, giving the wine freshness and minerality.
The vinification involves the manual harvesting of the grapes and a low-pressure pneumatic pressing. Each variety ferments separately in stainless steel tanks, using indigenous yeasts, at controlled temperatures between 17 and 21°C. The wine is then aged on the lees for 30 months, without malolactic, to preserve the freshness and aromatic complexity. No shipping liquor is added, maintaining the wine Brut Nature.
On the nose it opens with aromas of white fruit, citrus and light mineral notes. On the palate it is elegant and lively, with a creamy structure and a pronounced minerality, accompanied by a long and savory finish.
This sparkling wine pairs perfectly with raw fish dishes, shellfish and fresh cheeses.
