Description
The Fuoriclasse Leon Amarone Riserva di Castagner grappa comes from the pomace of Valpolicella grapes, left to dry for over 100 days before being vinified.
The pomace is treated and stored with Grappasystem, a system thanks to which it is possible to proceed with a controlled fermentation, obtained with the addition of selected oenological yeasts. Grappasystem guarantees the preservation of the skins in an ideal environment and with the right pH level, inside a food-grade plastic film tunnel, at high pressure and in the absence of oxygen. This is the secret that allows the grape skins to be kept very fresh and keep the aromas intact even for several months. The distillation takes place partly in traditional bain-marie stills and partly in technologically advanced column systems, in three different distillations. Before aging, the grappa is left to rest for at least 18 months in small oak barrels of first and second passage, previously used for the refinement of Amarone.
The nose reveals intense aromas of vanilla, honey, raisins, peach and bitter almond. On the palate it is round, soft and persistent.
Excellent at the end of a meal, it is served at room temperature smooth or as an accompaniment to dark chocolate and cream desserts.
