Description
The Fuoriclasse Leon Riserva 7 years of Castagner grappa comes from the pomace of selected red berried grapes.
The pomace is treated and stored with Grappasystem, a system thanks to which it is possible to proceed with a controlled fermentation, obtained with the addition of selected oenological yeasts. Grappasystem guarantees that the skins are kept in an ideal environment and with the right pH level, inside a food-grade plastic film tunnel, at high pressure and in the absence of oxygen. This is the secret that allows the grape skins to be kept very fresh and keep the aromas intact even for several months. The distillation takes place partly in traditional bain-marie stills and partly in technologically advanced column systems, in three different distillations. The Master Distiller is entrusted with the delicate task of establishing when the grappas obtained are ready to be combined in a harmonious blend. Aging for at least 7 years takes place in small oak and cherry barriques.
On the nose there are fruity and spicy aromas, as well as notes of vanilla, cocoa and wood. On the palate it is robust and balanced, complex.
Excellent at the end of a meal, it is served at room temperature smooth or as an accompaniment to dark chocolate.
