Grappa Bianca Prosecco Ice Castagner
Description
Castagner Prosecco Ice grappa comes from the pomace of Glera grapes, the grape from which Prosecco is produced.
The pomace is treated with the Pure Peel system. This system allows to separate the parts of the marc and to exclude the seeds and pedicels, in order to distil only the skins. These are subsequently treated and preserved with Grappasystem, a system thanks to which it is possible to proceed with a controlled fermentation, obtained with the addition of selected oenological yeasts. Grappasystem guarantees the preservation of the skins in an ideal environment and with the right pH level, inside a food-grade plastic film tunnel, at high pressure and in the absence of oxygen. This is the secret that allows the grape skins to be kept very fresh and keep the aromas intact even for several months. The distillation takes place partly in traditional bain-marie stills and partly in technologically advanced column systems, in three different distillations.
On the nose there are more delicate and typical Prosecco fruity and floral aromas such as pear, apple, apricot, peach and almond. It is rich in spring floral notes such as elderberry and mimosa. On the palate it is soft, fine and velvety.
Excellent at the end of a meal, it is served ice-cold.
