Description
Domaine Ponsot's Gevrey-Chambertin "Cuvée de l'Abeille" is produced from Pinot Noir vines planted in 2014 in the "Les Epointures" location. These vines grow on clay-limestone and alluvial soil, cared for according to the principles of sustainable agriculture.
Winemaking involves destemming the grapes, fermentation in wooden vats at a controlled temperature and the use of indigenous yeasts. The wine matures for 14 months in French oak barrels of around 20 years of average age, without the use of new barrels.
This wine has a ruby color with purple reflections and an intense bouquet of cherry, blackberry, violet and rose. On the palate it is full and structured, with velvety tannins.
It pairs perfectly with grilled red meat dishes or mature cheeses.
