Description
The '1694 La Diestral' by Vides Singulares is a Spanish white wine produced in the province of Ourense, Galicia, composed exclusively of Albariño grapes. The winery takes its name from a historical engraving found on the façade of the winery itself, a sign of a long winemaking tradition.
Winemaking involves maceration on the skins for three days in stainless steel tanks, followed by soft pressing. Fermentation occurs spontaneously with indigenous yeasts and the wine matures for six months on the fine lees in second or third passage French and American oak tonneaux, without clarification and filtering.
At sight, it has a bright straw yellow color with golden reflections. On the nose, it offers intense aromas of citrus fruits, cedar peel, tropical fruit, white flowers, medicinal herbs and iodine hints. On the palate, it is clear and smooth, with good complexity and expressive depth, and a very fresh and savory finish.
This wine pairs perfectly with grilled fish.
