Description

Dut'Un is a white wine produced in the Friuli Isonzo Rive Alte area, precisely in the Vie di Romans and Vieris vineyards in Mariano del Friuli. The vineyard extends over 1.30 hectares with an average age of 31 years, with silt-clayey soil, well drained, and rich in iron and aluminum oxides.

The vinification of Chardonnay and Sauvignon Blanc grapes begins with destemming, followed by cold skin maceration at 8°C and cold static clarification. Fermentation takes place at a controlled temperature between 16 and 19 °C with selected yeasts and lasts approximately 20 days. The wine does not undergo malolactic fermentation and is elevated on the yeasts for 9 months. After natural clarification, the wine is bottled and aged in the bottle for 19 months.

On the nose, Dut'Un presents a complex bouquet of fruity and floral aromas, with notes of citrus, white peach and elderflower, accompanied by mineral nuances. On the palate, the wine is fresh and harmonious, with a good structure and a long and persistent finish.

This wine pairs perfectly with fish, shellfish and white meat dishes, enhancing the delicate flavors of the dishes.
