Description

Dessimis is a refined dry white wine, produced exclusively with Pinot Grigio grapes from the Friuli Isonzo Rive Alte area, precisely in Mariano del Friuli. The vineyards, with an average age of 25 years, are located on shallow and well-drained soil, characterized by gravel and clay.

Winemaking begins with destemming and pressing, followed by a cold pre-fermentation maceration and static decantation of the must. Fermentation, carried out with selected yeasts, lasts from 20 to 22 days at temperatures between 16 and 19 °C. It is important to note that malolactic fermentation is not carried out, thus preserving the natural acidity and freshness of the wine. The refinement continues for 9 months on steel yeasts, with a natural clarification, without the use of clarifying agents.

Straw yellow in color with coppery reflections, it reveals aromas of ripe fruit such as apricot, peach and melon to the nose. There are also nuances of citrus, sweet spices and a light mineral hint. In the mouth it is rich and full, with good acidity that balances its broad structure.

This Pinot Grigio is ideal for accompanying elaborate fish dishes, shellfish and white meat dishes with creamy sauces, where its full body and structure can balance the richness of the dishes without overpowering the delicate flavours.
