Description

Zamò Grigio is a white wine produced exclusively with Pinot Grigio grapes.

After harvesting, the grapes are destemmed and pressed, with the must remaining for a day in spontaneous static decantation. The following day, after decanting to eliminate coarse deposits, fermentation begins with selected yeasts in steel tanks at a controlled temperature of 18°C. The alcoholic fermentation lasts approximately 15 days, followed by a 6-month refinement on the fine lees with weekly batonage. Malolactic fermentation is not carried out. At the end of the refinement, the wine is bottled and marketed after two months.

The color is intense straw yellow. On the nose it expresses fresh and floral notes, with hints of tropical fruit such as pineapple and banana, typical of Pinot Grigio. In the mouth it is very fresh and full, with a sour and savory aftertaste that persists pleasantly.

Excellent as an aperitif, it pairs perfectly with shellfish and raw appetizers, and can accompany first courses such as soups and stews, as well as delicate baked fish dishes.
