Description
Fontana Candida's Frascati Superiore Riserva Luna Mater derives from selected vineyards located on the hills of the municipalities of Frascati and Monte Porzio Catone, in the province of Rome.
It is produced with Malvasia Bianca di Candia and Malvasia del Lazio grapes, with small additions of Greco and Bombino. The harvest takes place in mid-October with careful selection of the grapes. A part of these is cooled and subjected to soft pressing, the other is cooled and placed immediately to ferment in contact with the skins in wooden barrels, extracting as much as possible the varietal character of the grapes of origin. Finally, a small portion of grapes, harvested later than the first ones, is added to whole berries to the fermenting must in order to maintain the typical aroma and flavor of the grape. The wine ages for 12 months, at least 4 of which in bottles lying in the cellar cave dug out of the tuff, in naturally constant conditions of humidity and temperature.
Golden yellow in color, it recalls the typical hints of the grapes on the nose, with hints of exotic fruit. In the mouth it is dry and soft, with tannins, pleasantly enveloping and sapid, with an elegant finish on notes of ripe pear and green almond.
Perfect to serve with the first courses of Roman cuisine, it is ideal in the company of fish and white meats.
