Description

Pavò's Satèn is a sinuous and fascinating Franciacorta. Its purity of Chardonnay makes the sip a caressing elegance, declined on delicate and refined tones. The Pavò winery is located in Iseo, a town in the province of Brescia belonging to the Franciacorta appellation.

The grapes, 100% Chardonnay, come from the vineyards located in the highest part of the moraine hills. Alcoholic fermentation is carried out partly in steel and partly in barrique or large cask. Malolactic fermentation starts spontaneously, but only partially. This is followed by a maturation period in steel for about 5 months and ageing in wood that varies from 6 to 12 months. Once the second fermentation in the bottle is complete, the wine remains in the presence of its yeasts for about 30 months.

Straw yellow, with a fine and persistent perlage. The nose confirms the refinement of the character, articulated in notes of ripe fruit and lime flowers. The taste is fresh but also delicately soft, summed up in a balance that leaves a memory of itself in a perfect mouth cleaning.

To be combined with a seafood salad.
