Description
Franciacorta Pinònero Riserva by Contadi Castaldi interprets Pinot Noir in a refined and unique version. Produced exclusively with Pinot Noir grapes from hillside vineyards, the wine benefits from a 65% yield, obtained from vines with an average age of 30 years. This wine is the result of a careful harvest, carried out between mid and late August.
The vinification involves a soft pressing, fermentation for 20 days in stainless steel and barrique, with malolactic fermentation partially carried out. After an initial refinement of 7 months between steel and barrique, a long refinement on the lees follows for at least 60 months. Disgorging takes place starting from July 2023, with a further post-disgorging refinement of at least 9 months. The dosage is less than 1 g/l, guaranteeing a pure expression of the terroir.
The wine has a light golden color and a fine and persistent perlage. On the nose it offers sophisticated and complex aromas ranging from citrus fruits such as lime, to hints of eucalyptus and cherry. On the palate it reveals a captivating structure, with a fresh attack that recalls lemon peel, evolving into light toasted notes and pulpy nuances of currant.
This Franciacorta is ideal to accompany refined fish or shellfish dishes, enhancing the taste thanks to its freshness and aromatic complexity.
