Description
The Franciacorta non-dosato Èssenza di Clarabella is produced with organic grapes mainly from the “Cascina” vineyard, near the Corte Franca winery, in the Province of Brescia. The blend is composed of Chardonnay and Pinot Noir.
The winemaking process begins with the soft pressing of the grapes, without adding sulfur dioxide and then with cold static decantation for 36 hours. The wine ferments in steel for 85% and in barrique for 15%, with bottling in spring and aging on the lees for 20-30 months.
It presents a fine and persistent perlage; on the nose it offers hints of citrus, fresh fruit and yeast. On the palate it is dry, savoury and mineral.
Perfect with first courses, white meats and fish.
