Description
Franciacorta DOCG Blànc is a refined blend of Chardonnay and Pinot Blanc, in equal parts, originating from 34 vineyards located high in the hills, each cultivated following traditional methods such as Guyot, Casarsa, Cordone Spur and Sylvoz, which guarantee a variable planting density and a yield in line with the Franciacorta regulations. The vines, whose average age varies between 25 and 32 years, are harvested strictly by hand between the end of August, ensuring a harvest of exceptional quality.
The vinification of Blànc follows a meticulous process that begins with soft pressing, followed by cold static decantation. Using selected yeasts, fermentation takes place for 20 days in stainless steel tanks, followed by an initial 7-month refinement in steel to preserve the freshness and authenticity of the fruit. The refinement on the yeasts varies from 34 to 42 months, culminating in a disgorgement which precedes a further rest of at least 3 months. The extra brut dosage gives Franciacorta Blànc a distinctive and elegant character.
This Franciacorta stands out for its very fine and lively perlage, which reveals a complex and seductive bouquet, dominated by notes of yellow citrus, almond, salt and white flowers, including broom and honeysuckle. The texture is enriched by a subtle chalkiness, while a vibrant minerality and freshness are the undisputed protagonists, giving a taste experience of profound elegance and balanced structure.
Ideal as an aperitif, Franciacorta DOCG Blànc pairs beautifully with delicate fish dishes, shellfish and Japanese cuisine, offering a gastronomic combination that enhances the purity and richness of the flavours. Its versatility also makes it perfect with light appetizers and fresh salads, inviting you to a culinary experience that celebrates the excellence and tradition of the Franciacorta area.
