Alma Assemblage represents one of the most emblematic expressions of Bellavista's production philosophy, which enhances the territory through a careful selection of 75 vineyards distributed mainly in the company's historic crus. Made with a blend of Chardonnay, Pinot Noir, and a very small percentage of Pinot Blanc, it fully reflects the elegance and complexity typical of Bellavista's style, thanks also to the average age of the vines, about thirty years, and the refined agronomic management.
The winemaking process involves gentle pressing to separate the free-run juice from the subsequent cuts, while part of the mass is aged in small oak barrels to add structure and depth. The assemblage process also includes a large proportion of reserve wines from multiple vintages, thus contributing to the stylistic consistency and gustatory identity of the product. After bottling, there is an average aging on the lees of about 30 months, followed by a manual riddling phase before disgorgement.
In the glass, it presents a bright yellow color with very fine and persistent bubbles, enriched by a creamy and pinpoint mousse. The aromatic bouquet opens with Mediterranean floral scents, fresh citrus, balsamic nuances, and sweet spices, outlining a refined and dynamic olfactory profile. On the palate, it is structured yet gentle, with a saline-mineral vein that provides balance and depth; notes of pomelo, white plum, wildflower honey, and candied citrus emerge, merging into a long-lasting and harmonious gustatory persistence.
Perfectly paired with raw fish, tuna tartare, or delicate risottos with shellfish.
