Description
The Franciacorta Brut Race Ducati Corse sparkling wine by Contadi Castaldi is born in the vineyards located in the heart of the Franciacorta DOCG.
It is a blend that comes from Chardonnay (75%), Pinot nero (15%) and Pinot Bianco (10%) grapes, harvested manually towards the end of August and the beginning of September. The grapes undergo a soft pressing and cold decanting. Subsequently they ferment in stainless steel tanks at a controlled temperature for 20 days thanks to the inoculation of selected yeasts. The malolactic fermentation is partially carried out. Subsequently the wine ages for 7 months partly in stainless steel tanks and partly in barrique. The refinement in the bottle is 20-26 months.
This Ducati Corse Race is characterized by a straw yellow color, with a fine and persistent perlage. The nose is fresh and vertical, with aromas of citrus, cedar, pineapple and pear. On the palate it is fresh and crunchy.
Perfect as an aperitif, it goes well with fish and sushi dishes.
