Description
The Fiano di Avellino Sequoia di Fonzone, produced with 100% Fiano grapes from Parolise, a small village near Avellino. The vineyards face south in an area characterized by clay soil with stone intercalations which offers an ideal climate for the cultivation of Fiano grapes.
The process involves the creation of four masses. The first three masses ferment in stainless steel tanks, the fourth undergoes fermentation and aging in large French oak barrels with very light toasting for approximately 12 months. Subsequently, they are assembled and refined in steel on the yeasts for another 6 months, and then refine in the bottle for 4/5 months.
Sequoia stands out for its intense green reflections and a refined and complex bouquet, with notes of jasmine, untoasted hazelnut, peeled almond, mandarin peel, vanilla and tropical fruit. On the palate, it is well structured with great flavor and a very light tannicity due to its youth.
Perfect in combination with seafood crudités, shellfish, fish-based dishes, seafood and medium-aged cheeses.
