Description
The Fiano di Avellino Riserva Neviera di Sopra di Rocca del Principe comes from vineyards grown in the Neviera district, the coldest area of Lapio in Campania, known for its significant temperature variations. These climatic conditions, together with the clayey soils with elements of volcanic matrix, are ideal for the Fiano grape, giving the wine unique characteristics.
The harvest takes place in the first ten days of October, followed by maceration with the skins for approximately 15 hours. The free-run must is then decanted and macerated with its lees for six days at a controlled temperature. Fermentation takes place 80% in steel tanks and 20% in barriques, always at a controlled temperature, for a period of 40 days. The refinement continues for 8 months in steel and barrique on fine lees, followed by 2 years in the bottle.
The wine has a straw yellow color embellished with light greenish reflections. The olfactory profile is intense, persistent and complex, dominated by citrus notes. On the palate, the flavor is fresh and dry, with balsamic tones and a marked mineral background, which suggest excellent aging capacity.
Ideal in combination with seafood and white meats, but also goes beautifully with vegetarian dishes and appetizers.
