Description

Zottorinoto is Cottanera 's Etna Rosso Riserva in which the Nerello Mascalese grapes from a single and suitable cru express themselves with their deepest character. It comes from 60-year-old plants, located on lava soil at an altitude of 750-800 meters above sea level.

The vinification begins with a soft pressing and maceration for about 30 days at a controlled temperature of 28 ° C. Fermentation takes place in steel at a temperature of 26-28 ° C with constant pumping over and fulling. Malolactic fermentation and 24 months maturation in French oak barrels follow. A further year of bottle aging allows the full development of its organoleptic qualities.

It comes in a bright garnet red color glass. On the nose floral and Mediterranean scrub notes predominate, which pave the way for greedy fruity hints of blueberry, raspberry and blackberry, all wrapped in a generous spice of vanilla and black tea. The palate is full-bodied and velvety, savory, with well integrated tannins to underline the long persistence.

Excellent with dishes based on mushrooms or truffles, it is an excellent accompaniment to game and aged cheeses.
