Description

This Etna Rosso belongs to the Palmento Costanzo line known as Mofete, a selection of younger vineyards, from 10 to 30 years of age, whose name recalls the scientific denomination of the last gaseous manifestations of a volcanic eruption.

The grapes are harvested by hand in the second ten days of October. The must is fermented in stainless steel with selected indigenous yeasts. After malolactic fermentation, it ages for 12 months 50% in steel and 50% in large barrels and refines in bottles for a further 12 months.

Wine with a medium intense ruby red color, it opens to the nose on spicy aromas and fresh wild herbs, echoed by hints of rose and volcanic ash. The mouth is juicy and balanced, with a savory and elegant finish.

It goes well with second courses of red meat, even grilled, and medium or long aged cheeses.
