Description
The Etna Rosso Cauru of Torre Mora originates from two different crus, Contrada Alboretto Chiuse del Signore, in the municipality of Linguaglossa, and Rovittello, located on the north-east side of Mount Etna. Cauru - "hot" in Sicilian - expresses the nature and warm energy of this wine forged by solar heat and built on a fertile and rich soil of volcanic origin.
The harvest period of the two varieties that compose it, Nerello Mascalese and Nerello Cappuccio, coincides with the beginning of the month of October. A light pressing follows a 24-hour cold maceration, followed by a 7-day maceration fermentation in steel. Spontaneous malolactic fermentation occurs, then the wine makes a short 3-month break in large wooden barrels.
The appearance is tinged with a bright and intense bright ruby color. The nose is sprinkled with fruity notes reminiscent of blackberries and red fruits of the undergrowth, then floral interventions of violet and rose, finally elegant touches of date. Mouth of great freshness that enhances the soul of this wine, in which a spicy tannin blends with a fresh and perky finish, almost electric.
Ideal to be served on red meat or with game-based main courses.
