Description
The Etna Rosso Fumu from the Barone Montalto winery originates from the northern slopes of Mount Etna, in the municipality of Castiglione di Sicilia, from a skillful blend of Nerello Mascalese and Nerello Cappuccio. The volcanic territory gives this wine a unique identity, characterized by great elegance and personality, best expressing the Etnean winemaking tradition.
The grapes are hand-picked in small boxes between the second and third decades of October. After careful selection, they are destemmed and subjected to fermentation in temperature-controlled cement tanks at temperatures between 22 and 25°C, with a maceration period of about 10-12 days. After fermentation, the wine ages for about six months in large wooden barrels, gaining complexity and harmony.
Visually, it presents a light ruby red color, with typical orange reflections of the variety. The bouquet is intense and refined, with notes of small red fruits, sour cherry, and wild cherry, enriched by spicy nuances derived from barrel aging. On the palate, it stands out for its balanced tannins, sapidity, and surprising elegance, with a long and persistent finish.
It pairs perfectly with cured meats and cheeses, first courses with meat ragù, and flavorful meats, enhancing their flavors with its harmony and structure.
