Description
The Etna Bianco Fumu from Barone Montalto winery originates on the northern slopes of Mount Etna, in the municipality of Castiglione di Sicilia, from Carricante grapes cultivated in a unique volcanic territory. The altitude and Mediterranean influence impart a distinct minerality and freshness to this wine, an authentic expression of the Etnean winemaking tradition.
The grapes are hand-picked in the first half of October and undergo careful selection before gentle pressing. The must is cold clarification and ferments at a controlled temperature of 15-16°C. After fermentation, the wine rests on the fine lees for about three months, then ages for a period ranging from three to six months in stainless steel and cement tanks, before bottling.
Visually, it presents a light straw-yellow color, enriched by intense greenish reflections. The bouquet is elegant and fragrant, with notes of green apple, grapefruit, white peach, and aromatic herbs. On the palate, one can discern sapidity, freshness, and exceptional minerality, which grant balance and persistence to the tasting.
It pairs perfectly with seafood appetizers, shellfish soups, pasta with sardines, baked fish, and vegetarian dishes, enhancing their flavors with its lively freshness.
