Description
The Etna DOC Bianco Fumu from the Barone Montalto winery originates on the northern slopes of Mount Etna, in the municipality of Castiglione di Sicilia, from Carricante grapes cultivated in a unique volcanic territory. The altitude and Mediterranean influence give this wine a pronounced minerality and freshness, an authentic expression of the Etna winemaking tradition.
The grapes are hand-harvested in early October and undergo a meticulous selection before soft pressing. The must is cold clarified and ferments at a controlled temperature of 15-16°C. After fermentation, the wine stays on the fine lees for about three months, then refines for a period ranging from three to six months in stainless steel and cement tanks before bottling.
It appears with a light straw yellow color, complemented by intense greenish reflections. The bouquet is elegant and fragrant, with notes of green apple, grapefruit, white peach, and aromatic herbs. On the palate, the wine shines with savoriness, freshness, and exceptional minerality, providing balance and persistence to the tasting experience.
It pairs perfectly with seafood appetizers, shellfish soups, pasta with sardines, fish baked en papillote, and vegetarian dishes, enhancing their flavors with its lively freshness.
