Description
Etna Bianco Contrada Cavaliere di Benanti is produced from Carricante grapes, a noble native white grape variety from Etna. It comes from vineyards on the south-west side of Etna, in the territory of the municipality of Santa Maria di Licodia. This area stands out for its high altitude, around 950 meters above sea level, and for its abundant brightness, factors which contribute to creating a less rainy mountain climate than the average Etna one and characterized by notable temperature variations. The soil is sandy volcanic, rich in skeleton and minerals, with a sub-acid reaction.
The harvest of Carricante grapes takes place by hand towards mid-October. After being destemmed, the grapes are pressed whole with a soft squeeze. The alcoholic fermentation takes place for approximately 12 days in steel tanks at a controlled temperature, using a specific native yeast, selected in the vineyard and cellar after long experimentation. Subsequently, the wine matures in tanks on the fine lees with periodic bâtonnages for 12 months before being bottled. Bottle refinement continues for a further 6 months.
Visually, it presents a straw yellow color enriched by bright green reflections. On the nose, it expresses an intense, rich and broad bouquet, with delicate fruity notes that recall orange blossom and ripe apple. In the mouth, it surprises with its dry and mineral flavour, perfectly harmonious, accompanied by a pleasant acidity and an aromatic persistence that fades into an aftertaste of anise and almond.
This wine is perfect in combination with fish dishes, even the most elaborate ones, where its minerality is able to enhance the flavors and textures of the dishes.
