Description
The Cadelvento Blanc de Blancs by Venturini Baldini is the result of the vinification of Chardonnay grapes in purity from hills not exceeding 300 meters above sea level and made up of clayey and sandy soils.
Following the first fermentation, the wine is sent to the second fermentation in a pressurized tank with the long Charmat method which allows a longer stay in contact with the yeasts.
Pale straw yellow in colour, it immediately offers a fine and persistent perlage. Fruity and floral notes are wisely balanced on the nose by subtle herbaceous hints of thyme and sage to be fresh on the palate, balanced and accompanied by a refreshing savoury note.
It excellently meets semi-mature cheeses, fish-based appetizers and supports with great rigour first courses based on shellfish and rustic pizzas with vegetables.
