A short distance from the famous Grands Echézeaux, in the heart of one of the most prestigious areas of Burgundy, the Echézeaux Grand Cru Vieilles Vignes Les Treux of Domaine Jean Tardy & Fils is born, from 80-year-old vines which give great complexity to this extraordinary example of wine from Pinot Noir grapes.
We are in the presence of one of the highest interpretations of this vine, thanks to a careful selection of the bunches, harvested only at the peak of their maturation. Winemaking begins with a pre-fermentative maceration at low temperature, then gives way to an alcoholic fermentation of 18-20 days. The wine ages in oak barrels for a period of between 16 and 20 months.
Deep ruby red in color, it offers an intriguing mix of aromatic notes that recall black pepper and fruity hints of blueberry. The taste is rich and structured, with velvety tannins that envelop the palate.
It is ideal in combination with game, both fur and feathered. Try it with a wild boar stew or a pheasant terrine.
