Description
The Pinot Noir District 7 is made with 100% grapes in the Monterey area of California.
The vineyards are cultivated with attention to sustainability and benefit from low temperatures and particularly widespread fog in the Salinas Valley. After harvesting, the grapes are transported to the cellar, de-stemmed and squeezed to ferment in open vats. After fermentation, the wine is aged for 12 months in French oak barrels, 25% new.
Ruby red of medium intensity, it presents aromas of wild rose, wild red fruits and returns of dried wild herbs such as thistle leaf and thyme. Smoky and cocoa notes anticipate a delicate and soft palate, with silky tannins, medium acidity and a medium-long finish.
Perfect for game and veal rollè, it goes well with first courses and semi-seasoned cheese platters.
