Description
Moillard's Crémant de Bourgogne Prestige is a fine example of a traditional sparkling wine made entirely from Chardonnay grapes from regions offering a variety of terroirs. The soils are granitic in nature, with schist and clay veins in Beaujolais, limestone and marl on the Côte Chalonnaise, limestone and clay-limestone Kimméridgian on Epineuil. The characteristics of these soils contribute to the complexity and finesse of the wine.
The grape harvest follows a careful process that begins with the immediate pressing of the bunches, using pneumatic presses. The next step is the separation of the solid sediments, called débourbage. The alcoholic fermentation takes place in stainless steel tanks at a controlled temperature, followed by the assembly of the wines which then undergo a second fermentation in the bottle. The refinement takes place for 15 months on the lees, after which the wine is placed on rotating supports and finally disgorged, with the addition of the liqueur d'expédition.
It has a pale yellow color with golden reflections, characterized by fine bubbles and a persistent foam. Delicate notes of white flowers, orange blossoms and fresh brioche emerge on the nose. In the mouth, it stands out for its freshness, with floral aromas and a notable aromatic persistence, where the fine and delicate bubble enhances its elegance.
It is ideal as an aperitif, but its versatility allows it to also accompany meals or enhance fruit-based desserts.
