Description
Pierre Ponnelle's Crémant de Bourgogne Brut is a fine expression of that Burgundy that can also give excellent and complex bubbles.
The grapes, 70% Pinot Noir and 30% Chardonnay, are harvested from the vineyards located in the Cote de Beaune and in the Cote de Nuits, areas historically suited to the excellence of these two vines. The cellars, set under the Cathedral of Notre-Dame de Beaune, host the long aging on the lees for 24 months.
The result is a Classic Method of great finesse, both visual and gustatory. The aromatic profile recalls the pungent citrus note of lemon on a mineral background and an enveloping riot of bread and pastry. The gustative fabric reveals the character of the two grape varieties, now more vertical, now more velvety. It persists in a delicate balance.
Suitable to accompany a vegetable tempura.
