Description
Willm's Crémant d'Alsace Brut originates in France, more precisely in Alsace, located in the North-East of the country. It is made up of two grape varieties, Pinot Bianco and Pinot Auxerrois. They come from vineyards located in a very varied soil and climate context. Here, in fact, the territory is influenced by the Vosges mountain range and is defined by a strong temperature range between day and night. The soils on which the vineyards used for the vinification of this Brut grow are predominantly granite, clay and silty, with an excellent mineral endowment.
The harvest time is chosen with extreme care and is slightly earlier than that of other varieties. After the vinification of the base, according to the traditional method used to produce Crémant d'Alsace, a refermentation in the bottle is carried out which ends with a rest on the lees for at least 12 months.
Straw yellow in color, it presents a bouquet layered on fruity tones that recall apple, yellow peach, apricot, ripe exotic fruit and a mineral trail. In the mouth it confirms the maturity of the fruit expressed in an aromatic intensity of thickness and body, played in a fine balance.
Interesting pairing with sushi.
