Description
The Côtes du Rhône Vieilles Vigne is a red wine from the Clos du Mont-Olivet, whose origins seem to date back to the 1500s or the episode of the sale of a vineyard called "ad montem oliveti". The Sabon family is linked to this territory in the early 1900s, where today the vineyards extend into 3 important appellations: 21 hectares in the Châteauneuf-du-Pape AOC, 14 hectares in the Lirac AOC, 10 hectares in the Cotes du Rhone AOC, 3 hectares in the Vin de Pays du Gard AOC.
After a partial destemming of the grapes, it is pressed and the must vinified in concrete tanks, where the malolactic fermentation also takes place. After the final assembly the wine continues to mature in large vats.
In the glass it has a ruby color. The olfactory spectrum is broad and revolves around aromas of red fruits and darker notes, such as undergrowth and leather. On the palate, it is enveloping, with well integrated tannins and excellent persistence.
Ideal in combination with roasted and stewed red meats.
