Description
Domaine de Savagny's Vin Jaune is a Jura specialty, an oxidative-style dry white wine produced from the white Savagnin grape, typical of this region. This special wine also has its own bottle, called "clavelin", of 0.62 cl. This quantity also symbolically represents the yield of finished product from a liter of base wine.
The wine consists exclusively of Savagnin grapes, which are traditionally vinified. The wine obtained ages in oak barrels for at least 3 years and for 4 years in unfilled barrels, similar to what happens with sherry.
Amber yellow in color, the nose is broad and rich. There are aromas of hazelnut and almond on a fruity background. The sip is dry and savory, medium-bodied and long persistence.
An extremely long-lived wine, it goes well with cheeses, white meats, Aosta Valley fondue or Roman gnocchi. Try it also in combination with Asian cuisine.
