Description
The red Côtes de Provence XIIIe Chateau Peyrassol is an organic wine that represents the expression of a unique terroir. The varietal composition of this wine is Syrah, Cabernet Sauvignon and Grenache. The grapes grow on clay and limestone soils in the internal valleys, with some plots characterized by fresh, deep soils, the freshness of which is preserved thanks to the northern exposure. This wine is the result of organic farming in conversion, with particular care of the soil, which includes the sowing of cereals between the rows of vines to encourage soil life.
The harvest is selected both in the vineyard and on the table, with grapes destemmed but not pressed, and placed in concrete tanks by gravity. Maceration lasts 3 weeks, with alternating punchings. After fermentation, a light racking clarifies the wine while retaining only the best lees, carefully processed to promote the aromatic expression and aging potential of the wine.
Visually it has a purple color with shades of violet. On the nose, notes of ripe Syrah, licorice, pepper and peony emerge, followed by a beautiful succession of red and black fruits. The palate is ripe with velvety tannins and balanced acidity, expressing intense flavors of red fruit and blackberry, followed by spice, which extend to a round, meaty finish.
This wine pairs perfectly with a homemade terrine accompanied by a platter of cured meats, a beef carpaccio with sucrines and capers, or a sautéed veal with apricots. Its structure and complexity make it ideal for a variety of culinary pairings, offering an exceptional gastronomic experience.
